Old-Fashioned Blueberry Pie with a Golden Lattice Crust
If summer had a flavor, it would be blueberry pie. This recipe has become a staple in our home every June, just as the days stretch out into golden afternoons. It’s one of those simple, satisfying bakes that brings everyone to the table, barefoot and berry-stained.
We always keep a bag of frozen wild blueberries in the freezer—tiny, sweet, and packed with flavor. They make this pie a year-round delight and hold their shape beautifully when baked.
Ingredients
600g frozen wild blueberries
90g coconut sugar
20g corn starch
2 tsp lemon juice
2 tbsp cinnamon
5g salt
1 egg + splash of milk (for the wash)
1 unbaked pie crust (your favorite homemade or store-bought)
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, gently mix the frozen wild blueberries, coconut sugar, corn starch, lemon juice, cinnamon, and salt. Stir until evenly coated.
Roll out your bottom pie crust into a 9-inch pie dish and trim the edges.
Pour the blueberry filling into the crust, spreading it out evenly.
Roll out your second crust and cut into strips to make a lattice. Weave them carefully over the top of the pie, then press the edges to seal.
Whisk together the egg and milk and brush it generously over the lattice top.
Bake at 400°F for 20 minutes, then reduce the heat to 350°F (175°C) and continue baking for 45 minutes.
Remove from the oven when the crust is golden brown and the filling is bubbling gently. Let cool completely before slicing.
