Ingredients:

  • 233g warm water (about 100–110°F)

  • 10g active dry yeast

  • 20g sugar

  • 35g tallow (you can substitute with softened butter, but tallow gives it a rich depth)

  • 345g bread flour

  • 20g milk powder

  • 10g salt

  • 1 egg, for egg wash

Instructions:

1. Bloom the Yeast

In a large mixing bowl or the bowl of your stand mixer, combine the warm water, sugar, and yeast. Let it sit for about 5–10 minutes until it’s foamy and fragrant. This is when the yeast wakes up and gets ready to work its magic.

2. Mix the Dough

Add in the tallow, bread flour, milk powder, and salt. Using a dough hook (or your hands if you’re feeling rustic), knead the dough for 6 minutes until it becomes smooth and elastic. It should be soft, slightly tacky, but not sticky.

3. First Rise

Cover the bowl with a damp towel or a piece of beeswax wrap and let the dough rise in a warm spot for 1.5 hours, or until it’s doubled in size. I like to set mine by the windowsill—it’s the perfect spot. While you wait, it’s a lovely time to sip a cup of tea, read a chapter of your favorite book, or tend to your garden. 4. Shape the Buns
